Dawn Roll with Smoky Tofu and Pinto Beans

Imagine a universe packed with all-in-one options. Just one sort of lamp! A single charging unit for each your devices! A single power pack size! One remote control! A single sort of food container! All-purpose switches! Just one coverage plan for living, passing and everything in between! Just one pot cover for every the cookware! Wouldn't that be great? That's what the burrito, with its assorted elements bundled in a tortilla, offers. Except that I haven't consistently adored the weight of them and the way the tastes combine so quickly. Therefore I've crafted my custom method. To my taste, this is the one.

Breakfast Wrap with Smoky Soy Curd and Speckled Beans

Serves 4

450 grams extra-firm bean curd
one teaspoon sweet smoked paprika
½ tsp garlic granules
one teaspoon ground cumin
two tablespoons chipotle in adobo
Sea salt
5 tbsp vegetable oil
a handful of squash seeds
two limes, zest from one and juice from both, to get juice amounting to three tablespoons
400-gram can speckled beans, with liquid
100 grams mayo (dairy-free, if required)
one ripe avocado
several large wheat tortillas, to serve
a small bunch cilantro, leaves and soft stems, coarsely chopped

Tear the tofu into 3-centimeter chunks and place them in a container. Mix in a small half-spoon of smoky paprika, a quarter teaspoon of garlic powder, half teaspoon of cumin powder, a tablespoon of adobo sauce, a half-spoon of fine salt and two tablespoons of the cooking oil, and mix so the soy curd is evenly coated.

Place a teaspoonful of oil in a frying pan on a medium flame, include the seeds and a big pinch of salt, and roast for 2-3 minutes, until they are golden brown and popping. Tip out on to a plate and scatter the zest of lime.

Put two large spoons of oil in the identical pan on a moderate heat, then cook the bean curd, flipping now and then, for ten minutes, until crunchy and golden. Transfer on to a another plate.

Empty the pinto beans and their brine into a saucepan, mix in the leftover half-teaspoon each of cumin powder and paprika, the remaining quarter teaspoon of dried garlic, two large spoons of the lime juice and almost a teaspoon of salt, and warm through for five minutes, squashing a some beans as you go.

In a little bowl, make a spicy mayo by combining the mayo with the leftover soup spoon each of citrus juice and chipotle peppers.

Right before eating, peel, pit and chop the avocado, and toast the flatbreads until they're soft and flexible.

To build, smooth a large spoon of creamy sauce in a straight line down the middle of each tortilla. Following the same line, layer a fourth of the sliced avocado, spoon over a fourth of the beans and a quarter of the tofu, then sprinkle over a one-fourth of the crunchy pepitas and cilantro.

Tuck the edges of the wrap over the edges of the contents, then tuck the base of the wrap and roll it away from you. Eat immediately.
